Why it works
Cauliflower net carbs
A whole head of cauliflower has about 16 g of net carbs, less than a cup of popcorn.
Cauliflower glucosinolates
Cauliflower carries glucosinolates, the sulforaphane precursors of the cabbage family.
Clarified ghee
Ghee is clarified, so it keeps the butter flavor without the milk proteins most dairy reactions come from.
